
Do you think I’m a weirdo for going on a vegetarian diet sometimes when I fancy so? I don’t deny that there are some days in the year when I do take vegetarian food only due to religious obligations but I think that commercial vegetarian dishes are too liberal with the oil.
When I go on vegetarian diet, I try to cook my own food but my recipes for vegetarian dishes are seriously limited.
I saw this Vegetarian Frittata recipe from Lady’s Choice which I think would be great to share. It also makes an excellent children party food. Check it out yourself. Preparation time is only twenty minutes, cooking time fifteen minutes. This recipe serves 24.
Ingredients:
1 onion, chopped finely
2 cloves garlic, chopped finely
6 eggs
2 tablespoons mayonnaise
60g sun dried tomatoes, finely chopped
60g grated cheddar cheese
salt and pepper to taste
Garnish with mayonnaise, cherry tomatoes, spring onion
Preparation:
1. Preheat oven to 180 degrees centigrade. Grease patty tins.
2. Heat one tablespoon oil and sauté onion and garlic until fragrant. Set aside to cool.
3. Whisk eggs and mayonnaise until smooth. Add in onion, grated cheese, sun dried tomatoes. Season with salt and pepper.
4. Spoon mixture into patty tins until almost full. Bake for 15 minutes or until puffed and golden. Cool in pan for 5 minutes. Turn onto a wire rack to cool.
5. To serve, garnish with some mayonnaise and cherry tomato and spring onion.
