Here is yet another vegetable dish that I like. However, since it’s fried (my favourite), if you are on a strict diet, better lay off fried food. The oil will not be good for your cholesterol level.

Check out what’s required. Preparation time is 20 minutes only but cooking time is approximately thirty minutes. The following recipe serves four.



Ingredients:
¼ cabbage, shredded finely
8 stalks spring onions cut into 2cm length
1 carrot, shredded finely
1 large onion, sliced finely
¼ pumpkin, shredded finely
½ cup flour, sifted
2 eggs, lightly beaten

¼ cup mayonnaise
¼ cup water (combine and mix until smooth)

Preparation:
1. In a large mixing bowl, combine flour, egg, mayonnaise mixture, salt and pepper together until smooth. Season with salt and pepper.
2. Add in cut vegetables and mix well.
3. Put in one tablespoonful of mixture into hot oil and fry till golden in colour. Fry three or four fritters at a time
