
At one point in my life, I had scones for supper every night! I don’t even remember why anymore. Perhaps it was because of convenience as I live near a pastry shop. Perhaps it was one of the lowest priced items in the shop.
Whatever the case, I am someone who could eat the same food daily and not get bored. I used to have rock bun during recess every school day for two or three years when I was in secondary school but that is another post for another day.
The scones that I had were definitely nothing like these hot drop scones. The scones that I had were dry like biscuits but these, these are simply yummilicious!
The following recipe will require forty-five minutes to prepare and cook. It makes 24 pieces.
Ingredients A:
120gm sifted plain flour
2/3 cereals
2 tablespoons sugar to taste
3 teaspoons baking powder
a pinch of salt
Ingredients B:
One egg, lightly beaten
350ml milk
1 tablespoon oil
1/2 teaspoon vanilla essence
1/2 cup raisins, optional
Preparation:
1. Mix Ingredients A into a bowl, gradually stir in Ingredients B.
2. Stir well until mixture forms a smooth and thick batter. Add raisins.
3. Heat a non-stick frying pan and place a tablespoon of batter on it.
4. Cook over low heat until bubbles raise and burst. Turn over and cook on the other side.
5. Serve hot with jam and butter.
