
I bought a packet of chocolate chip cookies just now. While it was tasty, I felt that it was a tad expensive and too sweet for my liking. I remember that I have a cookie recipe and dug it out from my drawer. I don’t remember if I have more cookie recipe but let’s start with this Ginger Cookies recipe.
When it comes to baking, I always make it a point to reduce the amount of sugar required. Of course, this is a personal preference and I do not mind eating something that is less sweet. In fact, with the history of diabetes in the family, I need to be all the more particular with my sugar intake.
Come, let’s see what are the ingredients that we would need to bake ginger cookies!
Ingredients:
160g plain flour
160g custard powder
1/2 teaspoon bicarbonate of soda
1 teaspoon nutmeg powder
1 teaspoon cinnamon powder
2 teaspoon ginger powder
200g caster sugar
150g butter
1 small egg
1 teaspoon golden syrup
coloured sugar icing
Preparation:
1. Sift all dry ingredients together and add sugar. Rub together with butter until the mixture resembles breadcrumbs.
2. Beat egg with golden syrup then add in the “breadcrumb” mixture. Mix to form dough.
3. Roll into small balls, arrange 5cm apart on a baking tray lined with non-stick baking paper.
4. Bake in preheated oven at 175 degrees Celsius for fifteen minutes.
5. Decorate with sugar icing.
