
There are some people I know who prefer to have noodles for their mail meal. While most Chinese must have rice for lunch and dinner or they will feel lethargic, a handful will prefer noodles or porridge, just something lighter, especially when the weather is hot.
Here is just the perfect noodle recipe called Fragrant Glass Noodles. If glass noodle is difficult to get your hands on, you could substitute it with rice noodles, I guess. The following recipe will require 45 minutes to prepare and cook, quite lengthy but worth it. It will serve four persons.

Ingredients for Dressing:
2/3 cup lime juice
3 tablespoons brown sugar
2 tablespoons ikan bilis stock granules with no added MSG
Ingredients for Noodles:
200gm glass noodles, soaked in hot water and drained
300gm medium prawn, blanched
150gm sliced squid, blanched
10 lettuce leaves, shredded
1 cup bean sprouts, blanched
1 small carrot, shredded
2 stalks celery, shredded
1 onion, sliced
3 cloves of garlic, shredded
6 chilli padi, sliced
2 stalks spring onion, sliced
2 stalks coriander leaves, sliced
4 tablespoons chopped roasted peanuts
Preparation:
1. Combine dressing ingredients and set aside.
2. In a bowl, combine noodle ingredients and add dressing. Toss well.
3. Sprinkle with chopped peanuts and serve immediately.
