<p>I bought a packet of chocolate chip cookies just now. While it was tasty, I felt that it was a tad expensive and too sweet for my liking. I remember that I have a cookie recipe and dug it out from my drawer. I don&#8217;t remember if I have more cookie recipe but let&#8217;s start with this Ginger Cookies recipe.</p>
<p>When it comes to baking, I always make it a point to reduce the amount of sugar required. Of course, this is a personal preference and I do not mind eating something that is less sweet. In fact, with the history of diabetes in the family, I need to be all the more particular with my sugar intake.</p>
<p>Come, let&#8217;s see what are the ingredients that we would need to bake ginger cookies!<br />

<blockquote><b>Ingredients:</b><br />
160g plain flour<br />
160g custard powder<br />
1/2 teaspoon bicarbonate of soda<br />
1 teaspoon nutmeg powder<br />
1 teaspoon cinnamon powder<br />
2 teaspoon ginger powder<br />
200g caster sugar<br />
150g butter<br />
1 small egg<br />
1 teaspoon golden syrup<br />
coloured sugar icing

<blockquote><b>Preparation:</b><br />
1. Sift all dry ingredients together and add sugar. Rub together with butter until the mixture resembles breadcrumbs.<br />
2. Beat egg with golden syrup then add in the &#8220;breadcrumb&#8221; mixture. Mix to form dough.<br />
3. Roll into small balls, arrange 5cm apart on a baking tray lined with non-stick baking paper.<br />
4. Bake in preheated oven at 175 degrees Celsius for fifteen minutes.<br />
5. Decorate with sugar icing.

<p>I&#8217;ve been like a headless chicken running around blindly and without direction lately handling the numerous projects on hand. So please bear with my slow updates on this and my other blogs!</p>
<p>When I saw this recipe of mini pizza in my collection of recipes, I thought I would share it. If you have been to any pastry or bakery shops, I am sure you have seen mini pizza like these before.</p>
<p>I don&#8217;t know how those mini pizza are for you but over here in Ipoh, Malaysia, the mini pizza that are sold, by the time I go to these pastry shops, would have hardened. I could go home and heat up the mini pizza, after all, the base is made of bread or dough but the topping would still be hard. The peas and corn would be like little stones.</p>
<p>Now that I have this mini pizza recipe on hand, perhaps it&#8217;s time to bake my own mini pizza. Let&#8217;s see what the required ingredients are.<br />

<blockquote><b>Ingredients:</b><br />
3 cups all-purpose flour<br />
1 (0.25oz) package active dry yeast<br />
2 tablespoons vegetable oil<br />
1 teaspoon salt<br />
1 tablespoon white sugar<br />
1 cup warm water (45 degrees Celcius)

<blockquote><b>Toppings:</b><br />
1 cup tomato puree<br />
1 cup frozen peas and corn, thawed and blanched in hot water<br />
1 cup turkey ham, diced<br />
1 cup canned pineapple, diced<br />
1 cup mozzarella and cheddar cheese, grated

<p>
<blockquote><b>Preparation:</b><br />
1. Line large baking pan with non-stick baking or cooking paper.<br />
2. Combine flour, salt, sugar and yeast in a large bowl. Mix in oil and warm water. Roll out small portions of dough to 4 inches in diameter.<br />
3. Spread tomato puree, sprinkle pepper and place toppings onto pizza dough.<br />
4. Bake at 190 degrees Celsius for twenty minutes.<br />
5. Remove and sprinkle cheese as additional topping.
