It’s funny that even though rice is nothing but pure carbohydrates, many of us whose staple diet consists of rice, would feel lethargic if we did not eat rice for more than a day. I know it’s just psychological but tell this to people of the older generation.
Today’s recipe of Nasi Ulam is a traditional Malay dish. I am not that familiar with Malay dishes, though I have no problems trying them out when they are served hotel buffets. With this recipe, perhaps I will try cooking it myself. It looks easy enough.
Cooking and preparation time is forty-five minutes and will serve six persons.

When I was young, we used to eat out every dinner. And we used to patronize a chicken rice stall who had the option of yellow rice or white rice. Back then, their yellow rice was because of the chicken fat. Now, I understand that the yellow rice is cooked with margarine instead!
People used to say that it’s not healthy to eat chicken rice with the yellow rice but heh, it’s not authentic Hainan chicken rice if it’s not cooked with chicken fat!
Today’s chicken rice recipe is courtesy of Knorr so the yellow rice is made with margarine and chicken stock. Anyway, this recipe is rather long but I believe it will be worth the effort!
