
Here’s a delicious recipe that I found in my recipe collection that is very easy to prepare. Total preparation time is approximately thirty minutes only and will serve up to six persons.
It really is spicy so if you are not someone who can tolerate spicy food, this is to be avoided. But just look at the photo! Really mouth-watering and it is dinner time now as I am writing this! Urgh!
Ingredients:
750gm fish fillet
2 teaspoon anchovies stock granules
½ tablespoon cooking oilaluminium foil
Banana leaves
Ingredients A:
½ cup Thai chilli sauce
1 stalk lemon grass, thinly sliced
6 chilli padi, sliced
3 cloves garlic, minced
1 stalk coriander leaves
1 medium onion, thinly sliced
2 tablespoon lime juice
Sugar to taste
Preparation:
1. Marinade fish with anchovies stock granules for 15 minutes
2. Rub cooking oil all over fish fillet. Place fish on banana leave and then on aluminium foil.
3. Mix ingredients A well and spoon over fish.
4. Fold the foil over the fish preparation and make a hole in the centre of the foil for steam to escape.
5. Bake in a 200oC preheated oven for 15 – 20 minutes OR steam for 15 minutes in a steamer.
Serve with rice.
